Beef Enchilada Casserole with Cilantro Lime rice

Who doesn't like a spin on a Mexican favorite? Enchilada casserole, or as some like to call it, Mexican lasagna. Layers of seasoned ground beef, shredded Monterey Jack and queso blanco cheeses, enchilada sauce, corn tortillas and topped with tomatoes, cilantro and black olives. Served with cilantro lime rice.
