Chicken Caprese with Roasted Garlic Mashed Potatoes and Seasonal Vegetables

Balsamic grilled chicken topped with homemade basil pesto, roasted cherry tomatoes, and Italian blend of cheeses served with corn risotto and roasted seasonal vegetables. We use organic boneless/skinless chicken breasts from Gerber Farms in heart of Ohio’s Amish country. Served with pesto-cream pasta and asparagus.
