Chicken Enchilada Casserole with Mexican Street Corn

Who doesn't like a spin on a Mexican favorite? Enchilada casserole, or as some like to call it, Mexican lasagna. Layers of seasoned chicken, shredded Monterey Jack and queso blanco cheeses, enchilada sauce, corn tortillas and topped with tomatoes, cilantro and black olives. Served with Mexican Street Corn.
