Gram's Roast Beef with Gravy, Mashed Potatoes and Roasted Seasonal Vegetables

We use eye of the round for our roast beef, just like my gram would! We season and sear, and then on to a slow roast until medium rare (slow and low that is the tempo!;). We serve this with our mashed potatoes and roasted seasonal vegetables. Comes with beef gravy on the side.
