Gram's Roast Beef with Gravy, Mashed Potatoes and a Veggie Medley

We use eye of the round for our roast beef, just like my gram would! We season and sear, and then on to a slow roast until medium rare (slow and low that is the tempo!). We serve this with our mashed potatoes and a veggie medley (carrots, broccoli, & cauliflower). Comes with beef gravy on the side.
