Pot Roast with Gravy, Mashed Potatoes and Vegetable Medley

We season, sear, and braise beef chuck roast until fork-tender (slow and low that is the tempo!). We then deglaze the pan with red wine and stock to make our gravy. We serve this with our buttery mashed potatoes and a vegetable medley.
